This is through history perhaps most famous Degrassi brand among red wines, Cabernet from the Contarini position. The low yield per hectare enables the achievement of the properties of top wines. The vineyards are laid out like an amphitheater and ideally use the local climate and the mineral soil of the white land.

Alcoholic fermentation begins at a temperature of 25-28 ° C, 15 to 20 days. Malolactic fermentation and maturation take place in small oak barrels for 18 months, which favors the pairing of rich and noble aromas of wood and grapes. This is followed by blending and aging the wine in a large barrel for one year, after which it is rounded and matured in the bottle for the next 6 months.

The wine has dark ruby color. The aroma is initially dominated by spices and spicy notes, such as roasted coffee, vanilla, black and green pepper, but soon ripe plums and maraschino rise. In taste strong, warm wine, soft, with clear tannins, drinkable.
