A dessert wine that is the result of long-term work and effort, full of sweetness and deep amber in color, like a golden nectar.
In Sylvis Arbor Selection dessert malvasia is the result of the traditional drying of grapes that is handpicked at a specific time, choosing only healthy, smaller, and loose clusters. Clusters dry in the wooden boxes on straw, under controlled conditions, until the berries lose enough water, ie until the sugars are concentrated (even over 350 g / L). This is followed by sludging, maceration, pressing, and fermentation, then by precipitation, pouring, and finally - aging in wooden barrels.
Due to the extremely thick and sweet must, production takes a long time and the wine is ready only after three years. The result of a long-term work and effort is a wine full of sweetness, but also very lively thanks to well-balanced acids. It is deep amber in color, like golden nectar. An intense scent with notes of nuts, raisins, figs, and dried oranges is woven with a very sweet taste and a thick texture reminiscent of honey.

In Sylvis winery is located in the heart of the Istrian peninsula, in Sveti Petar u Šumi. The name of the village derives from the monastery historically known as Monasterium Sancti Petri in Sylvis (meaning in the woods), hence the name of In Slyvis wines. There are 7.400 vines of Istrian Malvasia and 1.500 vines of Merlot planted on 2,1 hectares of land. The cultivation method is a traditional single Istrian guyot that gives grapes of high quality and controlled yields. This, in combination with
Mediterranean climate provided by the vicinity of Lim Valley results in a unique terroir of central Istria that characterizes In Sylvis wines.
The wine offer includes In Sylvis Istrian Malvasia and Florens Rose, as well as Arbor (lat. wood) matured wines: Malvasia, Cuvee, and dessert wine Selection.
The story about wine and vineyard in the forest is completed by their luxury labels with forest motifs, printed on real wood instead of paper.
