It is well-known on the Istrian peninsula that the Istrian sausage is a dry-cured meat product used since time immemorial as a major source of sustenance by all the inhabitants of Istria. The Istrian sausage is a preserved dry-cured meat product derived from bulk minced pork and seasoned with solid pork fat, sea salt, pepper and garlic cooked in Istrian Malvasia.
In the Istrian way, sausages are shaped into "kambe" and dried in controlled conditions for 30-35 days, first with higher humidity, and towards the end of drying it decreases. After a month of drying, it becomes a premium culinary delicacy rich in flavour and aroma.
