Aromatic and Sweet, Istrian Teranino

Teran and brandy love each other, a lot. United, combined with spices, they give one of our favourite Istrian liqueurs: teranino.

Drinking brandies and liqueurs is a social phenomenon and a lifelong companion of Istrian people: here you will toast with ‘’a short one’’ (a shot) on every occasion. Celebrating birth, birthdays, or weddings, getting together or saying goodbye, or, if there is no better reason, for a good start of the day, for a better meal, or a good night’s sleep. So it doesn’t surprise the fact that there are as many types of brandy as people’s tastes. People in Istria make brandy with the addition of almost anything: aromatic herbs, honey, fruit, and even truffles.

Historically speaking, types of spirits are closely related to the availability of different supplements, so many types, just like most Istrian dishes and drinks, were created by the Istrian farmers who needed to make something delicious and special in unfavorable conditions.

One of the liqueurs created by such a combination of available and traditional ingredients is Istrian teranino, a favorite to lovers of slightly milder liqueurs. Traditional Istrian liqueur made from Teran, with an addition of spices, is sweet, aromatic, and enticing. That’s why you could be easily tricked into drinking ‘’just a little more’’, until you start feeling dizzy. 

Recipe for a homemade teranino

Making teranino at home is really not difficult, and all you need is a liter of Istrian teran, brandy or rum, and spices of your choosing. 

Ingredients for a homemade teranino:

  • 1 liter of Istrian teran
  • 400 grams of sugar
  • 1 vanilla sugar
  • Lemon zest
  • Other optional spices: cinnamon, cloves, orange, nutmeg…
  • 300 ml of rum or brandy

Method:

Bring the wine, sugar and spices to a boil and cook for about half an hour. When it cools down, add brandy or rum, boil again for five minutes, cool down and store in closed bottles. Keep in a dark and cold place, consume with pleasure.

Aura’s Teranino is best served cold, with no ice, as an aperitif, or accompanying a dessert.

  • 0,02 L rose syrup
  • 1,5 dcl soda
